Guilt-Free Cinnamon Roll Donut Holes {Recipe}


No matter how healthy I get, I will always have a craving for cinnamon rolls! 
There is something about that cinnamon-y sweetness that is satisfying. However, I refuse to let myself indulge in something that would harm my body...so a traditional cinnamon roll is out.

With a 1 1/2 year old, I have found it necessary to have quick "grab and go" foods.
 Snacks need to be finger foods that aren't messy....

I wondered what would happen if I mixed donut holes, cinnamon rolls, and healthy....

Drumroll please.....

Here's what I got!!

You're gonna want to try these! 
They don't disappoint....

Gluten Free Guilt Free - Cinnamon Roll Donut Holes

Ingredients:

  • 1 1/2 cups Bob's Red Mill Brown Rice Flour
  • 1 tsp. Clabber Girl Baking Powder
  • 1/8 tsp. sea salt
  • 3/4 cup 100% PURE Maple Syrup 
  • (not the processed chemical fake crap!!)...you could also use 18-20 packets of Stevia In The Raw in place of the syrup.
  • 1/2 cup coconut oil
  • 3 1/2 tblsps. cinnamon
  • 2 tsp. gluten free vanilla extract
  • 1/2 cup Blue Diamond Almond Coconut Milk
  • 2 eggs
Directions:

1. With an electric mixer mix together coconut oil, maple syrup, eggs, and vanilla...do this for at least 1 minute. Make sure it is really well blended.
2. In a second bowl, wisk together brown rice flour, sea salt, and baking powder.
3.  While mixing with the electric mixer, slowly pour the  brown rice flour mixture. into the egg mixture. 
4. Using a cake pop maker ( I used the Baby Cakes cake pop maker). Pour 1 tablespoon batter into each compartment.
5. Close lid and bake for 3-4 minutes, or until fully cooked.
6. Let cool, then enjoy!

Makes approx. 3-3 1/2 dozen donut holes.

I would estimate approximately 15-20 minutes at 325F or until cooked through (this is just a guess). I have not tried this method, I only use the cake pop maker as I don't have the time due to all the other food I make in a day.

They also made wonderful beach snacks for us this past weekend! I simply put them donuts in a Ziploc and took them along!
